The Pioneer Woman Ree Drummond demonstrated her recipe for mini peppermint rolls. Here's how to make this delicious dish.

Ree Drummond recently shared some of her favorite recipes to make during the Christmas season. The Pioneer Woman says she enjoys making mini peppermint rolls during this time of year. It just wouldn’t be the holidays without the smell and flavor of peppermint, so it only makes sense to incorporate it into a holiday recipe. “I love minty things around the holidays, and I love miniature sizes of food,” says Drummond during The Pioneer Woman show.

Drummond says she enjoys this season because it gives her so many reasons to cook and bake. She also loves small holiday bites. Drummond says small treats are great for parties and family gatherings. Here’s how she makes her mouth-watering mini peppermint rolls.

Drummond starts by combining melted butter with sugar, a splash of vanilla, and a splash of peppermint extract. She says the great thing about this recipe is that it’s very simple. Drummond simplifies her recipe by incorporating one of her shortcut recipe tricks—she uses store-bought dough.

“The great thing about this recipe is it’s incredibly simple because I did not make the dough from scratch,” says Drummond on The Pioneer Woman show. “I am using none other than crescent roll dough that is sold in a tube in the grocery store. There’s nothing fancy about it, and it’s just going to result in this really delicious little treat that you can serve for brunch.”

Next, Drummond spreads half of the butter, peppermint, and sugar mixture on one piece of the crescent roll dough. The mixture is very thick, but Drummond says that’s OK because it should be thick. She explains this recipe is a play on her famous cinnamon rolls. She says they won’t “one up” her cinnamon rolls, but they’re a nice treat if you have a craving for something sweet.

“If you just want a really simple, sweet roll in a pinch, these are delicious,” says Drummond. “And just using any kind of ready-made dough really cuts the time in half. Whenever I make homemade cinnamon rolls, most of the time is spent on making the dough itself.”

Cutting the peppermint rolls and making the glaze

For the next step, Drummond rolls the dough using a typewriter technique. She then cuts the rolls with a bench scraper and puts them into the pan. Drummond says you can line the rolls up neatly or “cram them in wherever they will fit.” She promises the rolls will taste good no matter which method you choose. Drummond advises cutting 16 rolls. She admits she cut too many rolls during her show, but the correct number of rolls is 16.

Drummond recommends baking the rolls for 23 to 24 minutes at 350 degrees until they’re golden brown. Once the rolls are done, she adds glaze. For the glaze, Drummond uses powdered sugar, milk, melted butter, red food coloring, and peppermint extract.
